Key responsibilities:
- Organization of cafe work, formation of a team of cooks, their training;
- Development of technological maps and technological instructions;
- Introduction of a new assortment according to the concept of the enterprise, introduction of new dishes in the menu for every day;
- Analysis and adjustment of the assortment of cafes in order to improve it;
- Control of turnover, analysis of income and profitability of production;
- Calculation of the average check, calculation of the production cost;
- Food cost control of finished products;
- Control of the assortment and its quality;
- Observance of product storage conditions, according to the commodity neighborhood, quality control of manufactured products;
- Participation in automation of production processes, purchase of necessary equipment, etc.;
- Reporting to the Director of the Business Park.
The purpose of the position: Creation of menus and technological maps of simple, understandable, tasty food with an assortment that is updated daily, the cyclical repetition of the menu once every 10 days.
Requirements:
- Higher education;
- Work experience in the direction of 3 years or more;
- Management experience;
- Understanding the rules of production and sale of food products;
- Experience in menu implementation;
- Knowledge of the rules and methods of organizing the visitor service process;
- Knowledge of cost price, food cost;
- Purposefulness, responsibility, ability to work in a team;
- Love and maximum immersion in one’s work;
- The ability not to stop at what has been achieved;
- Positive thinking, love for people, inspiration and energy.
